Our Irish fruit wedding cakes are a medium fruit cake made with raisins, currants, sultanas, candied fruit peel, cherries, spices, treacle, and Irish whiskey. After baking, we preserved them with another shot of Irish whiskey and layer the cake with almond paste before decorating it with traditional royal icing.
